Pork rinds and cheese crisps are a fairly common substitute for crackers while on a keto diet, but what if you could have something that resembles that buttery, flaky texture of a real cracker? That was our goal when creating this recipe. This recipe for a keto cracker is both buttery and flaky, while still being able to hold up to a little bit of force. The taste and texture reminds me of a Ritz cracker, and you’ll probably use them in the same way. You won’t be scooping peanut butter out of a jar with them, but they’re great for topping or scooping light dips..

INGREDIENTS.
40 graham crackers (10 cookie sheets).
2 tablespoons sugar.
2 tablespoons butter, melted.
1 large egg white.
DIRECTIONS.
1. Preheat oven to 350°..
2. Place crackers in a food processor; process until crumbly. (You can also put in a plastic bag and have your kids pound the crackers until they are crumbly). Add sugar, butter, and egg white..
3. Mix until moist. Press crumb mixture into muffin tins (coated with butter or nonstick spray)..
4. Bake at 350° for 8 minutes..
FILLING.
INGREDIENTS.
1 (15-ounce) can unsweetened pumpkin.
2 large eggs.
1 (14-ounce) can fat-free sweetened condensed milk.
3/4 teaspoon ground cinnamon.
1/4 teaspoon ground allspice (optional).
1/4 teaspoon ground nutmeg.
1/8 teaspoon ground cloves (optional).
DIRECTIONS.
1. Mix all ingredients together..
2. Spoon mixture into pre-baked pie crust..
3. Bake at 350° for about 25 minutes..
4. Let cool, then place in refrigerator for at least six hours, preferable overnight..

INGREDIENTS.
3/4 cup graham cracker crumbs (about 12 squares).
2 tablespoons sugar.
2 tablespoons butter, melted.
FILLING:
1 package (8 ounces) cream cheese, softened.
1 can (14 ounces) sweetened condensed milk.
1/3 cup lemon juice.
1 teaspoon vanilla extract.
1 can (21 ounces) cherry pie filling.
This should make 6-8 servings. Really depends on the size of glass you use.

�� How To Make A Graham Cracker Pie Crust Recipe Over the next few weeks we’ll be baking a bunch of pies that need Graham biscuit pie crusts..
Ingredients:
200g Graham crackers (or soda biscuits, arrowroot, Maria biscuits).
125 mL (½ cup) melted butter.
45 mL (3 Tbsp) sugar.
Method:
Preheat oven to 180ºC (350ºF)..
Crush the crackers into a fine powder..
Add the sugar and melted butter, and mix until fully moistened..
Pack into a pie plate, tamping down with a spoon, the bottom of a glass, or your hands..
Bake for 10-12 minutes just until firm..
Makes 1 pie crust for an 8″-9″ pie plate..

You’ll Need:
6 oz cocoa cream.
3 oz powdered sugar (and a little more to sprinkle on top before serving).
2 fresh eggs.
1 oz baking cocoa.
1 packet Graham Crackers.
Tip: some rum or almond flavoring.
Here’s How:
1.1 First, warm the cocoa cream in a pot. Make sure that it doesn’t boil. Leave it to cool for a little while. Beat the eggs with the powdered sugar until foamy and add the cocoa cream. You can also add some rum or almond flavoring at the is point if you so wish..
1.2 Break up the Graham Crackers and stir them into the cocoa cream..
1.3 Spoon the mixture onto plastic wrap and roll it up into a long sausage. Wrap this in aluminum foil and place it in the fridge for at least two hours..
1.4 Remove the aluminum and plastic foil before sprinkling on a generous amount of powdered sugar onto your chocolate salami. Add some string and a label for the finishing touch. A pretty cool gift, don’t you think?
2. Chocolate Cream Cake.
You’ll Need:
1 packet Graham Crackers.
For the cream:
11 oz cream cheese.
5 oz whipped cream.
3 oz powdered sugar.
1 tbsp vanilla extract.
For the decoration:
5 oz whipped cream.
chocolate shavings.
Here’s How:
2.1 Beat the fresh cream with the powdered sugar and vanilla extract. Carefully fold in the whipped cream..
2.2 Line a casserole dish with plastic foil and fill a piping bag with the cream. Next, pipe the cream onto the bottom and sides of the dish..
2.3 Now start to add the Graham Crackers to the dish. Place 3 Graham Crackers lengthways along the top edge of the dish and pipe a layer of cream in front of the cookies. Continue this pattern until the dish has been filled. Afterwards, cover everything with the rest of the cream and smooth it out flat. Fold over the plastic wrap and refrigerate the dish overnight..
2.4 The next day, you can remove your Chocolate Cream Cake from the dish. Remove the plastic wrap and decorate the cake with cream and chocolate shavings..
3. Vanilla Pudding Delight.
You’ll Need:
32 Graham Crackers.
26 fl oz milk.
2 eggs.
2 packets vanilla pudding.
1 tbsp vanilla extra.
7 tbsp sugar.
8 oz whipped cream.
Here’s How:
3.1 Place 16 Graham Crackers on a casserole dish so that the bottom is completely covered..
3.2 Warm up 20 fl oz of milk with the sugar and vanilla extract in a pot. Separate two eggs..
3.3 Stir the remaining 6 fl oz of milk with the vanilla pudding powder and 2 egg yolks..
3.4 Once the milk from Step 3.2 is boiling, add the mixture from Step 3.3 and leave everything to boil until the pudding is thick. Leave it to cool..
3.5 Whip the egg whites and carefully fold them into the pudding mixture. Spread the pudding on top of the Graham Crackers in the casserole dish and refrigerate it for a short while. Once the pudding is chilled, spread whipped cream on top of it and place another layer of Graham Crackers on top. Refrigerate the Vanilla Pudding Delight for a further two hours..
